Vada Pav is a popular street food dish from the state of Maharashtra in India, particularly associated with the city of Mumbai. It consists of a spiced potato fritter (vada) that's sandwiched between a small bun (pav), which is usually buttered and toasted. The potato filling is typically made with mashed potatoes mixed with various spices such as turmeric, mustard seeds, curry leaves, and green chilies. The vada is dipped in a chickpea flour batter and deep-fried until crispy.
The vada pav is often served with chutneys such as green chutney (made with coriander and mint) and tamarind chutney, as well as fried green chilies or chili powder for extra spice.
